Socially Distanced Sports Bar. A show about sport that often forgets it's a show about sport...and it's all the better for it. Floodlines was also superb, but for very different reasons.
Two podcasts which predated 2020, but which I discovered and fell in love with last year were Dear Joan and Jericha (so wrong, but often so funny) and Unflopped (a lovely music-focussed podcast which feels like it creates a community of listeners, much like a niche radio show).
The Socially Distanced Sports Bar. Yep, it is blokes talking about sport - so far so non groundbreaking. It's evolved into more than that though, three very funny people to hang out with even if you hate sport. I suspect the slowly increasing episode length (recently regularly topping two and a half hours....!) may put off a fair few new listeners
PIVOT is without doubt a must listen for tech/media news. I also thoroughly fell in love with THE HORNE SECTION PODCAST if you want some music based lols.
Helen Fospero's CONVEX CONVERSATION. Real cosy and personable chat 'one to one' with seriously intelligent people . they all sounds like tyou would enjoy having dinner with them. Very well engineered and produced half hours, and now available / audible via the usual outlets.
Hanging Out With Audiophiles was a late discovery in 2020, first tuning in for a Four Tet interview but now working my way through the back catalog. It's proper in-depth and nerdy music-making chat, and host Jamie Lidell has a delightful charm that just brings it all together. I especially love the way he incorporates music, and a section where he noodles around with new gear and includes the sounds of its output — a real zine feel in podcast form.
Field Recordings is a podcast that just features the sounds of our world. Usually just a few minutes long, it's a collection of audio field recordings - essentially an open microphone somewhere: https://fieldrecordings.xyz/
I've enjoyed My Mate Bought A Toaster - it's an interview show, but done through the subject's Amazon history: https://podfollow.com/1462168683
Lockdown Parenting Hell with Rob Beckett and Josh Widdicome. Funny anecdotes about life in lockdown and parenting hacks from guests.

Lockdown Parenting hell, as Steve says has been brilliant.
I've also enjoyed Changes from Annie Mac - there's an interview with a former neo-nazi which is mind blowing.

Wilde Walks are simple walks in beautiful Hampshire countryside described with passion and charm by author Suzie Wilde. Disclosure: I had a hand in getting it started but Suzie has taken it far beyond. Weekly. https://omny.fm/shows/petersfieldstories/playlists/suzie-wildes-wilde-walks
The Town That Didn't Stare is a brilliantly bizarre series about East Grinstead. Work that one out.
Neighbuzz the Neighbours Recap Podcast, is so much more than its title , inclusive, irreverent and happy to call the show on its crap
